Ingredients

  • 2 cups oats
  • 1⁄2 cup fresh apricots, figs, or dates, chopped
  • 1⁄2 cup chopped pistachios
  • 1⁄2 cup shredded coconut
  • 2 tablespoons flaxseed
  • 1⁄2 cup almond butter
  • 1⁄4 cup, plus 2 tablespoons honey
  • 1 tablespoon coconut oil
  • 1⁄4 teaspoon salt

Method

Step 1

Preheat the oven to 350°F.

Step 2

Dry toast the oats in a small skillet over medium heat until golden brown, about 1 to 2 minutes.

Step 3

In a large bowl, combine the toasted oats, chopped apricots, pistachios, coconut, and flaxseed.

Step 4

In a small saucepan over medium heat, bring the almond butter, honey, coconut oil, and salt to a boil, stirring constantly for about 1 minute.

Step 5

Pour the heated mixture over the oats and stir until well combined.

Step 6

Press the batter into a square baking pan and bake until golden brown, approximately 10 to 12 minutes.

Step 7

Allow to cool, then cut into squares and serve.
